Abstract: El Perú es un país privilegiado, tiene un extenso mar territorial que posee una gran diversidad de recursos hidrobiológicos, lo que permite que se desarrollen actividades como la pesca, que se realiza a nivel artesanal e industrial, siendo reconocido por esta actividad a nivel mundial. Además, se ubica entre los 10 principales países con la mayor producción de pesca marina (Organización de las Naciones Unidas para la Alimentación y la Agricultura [FAO], 2022).
Pese a lo expuesto, solo un porcentaje menor de las capturas de estos recursos hidrobiológicos se destinan para el Consumo Humano Directo (CHD), pues su mayor aprovechamiento se realiza en la pesca industrial destinada al Consumo Humano Directo e Indirecto (CHI), siendo su principal actividad la pesca de anchoveta para la harina y aceite de pescado.
El pescado como recurso, es un alimento rico en proteínas de alto valor biológico y ácidos grasos como el Omega 3 (EPA y DHA), vitaminas A, D y E, Complejo B y minerales como el Yodo, que contribuyen con una alimentación saludable para el ser humano.
Para lograr que los beneficios nutricionales de los recursos hidrobiológicos sean aprovechados por más personas, el Estado viene trabajando en fomentar, expandir y consolidar los mercados para el consumo interno, difundiendo las bondades nutricionales del pescado, dando apertura a líneas de negocio y buscando la consolidación de las cadenas de distribución de estos recursos. En tal sentido, promueve las actividades que comprenden la pesca artesanal para que los recursos marinos puedan llegar a más consumidores finales.
En ese sentido, y ante la oportunidad del crecimiento del sector de comercialización de productos hidrobiológicos para el Consumo Humano Directo, hemos desarrollado un plan de negocio orientado a evaluar la viabilidad de la implementación de una pescadería ubicada en el distrito de San Borja, a la cual hemos denominado Pescarena Fish Market, y comprende las actividades que deben desarrollarse para este fin.
