The project focuses on the design of an automated plant to produce aguaymanto nectar, with a capacity of 50 kg. A comprehensive study was conducted from various sources to select sensors, actuators, software, and essential data for the different processes involved in elaborating the nectar, highlighting the importance of technology in production optimization. A key part of the project addressed the mechanical design of tanks used in the scalding and pasteurization processes. Detailed theoretical calculations were carried out to ensure the efficiency of both processes, considering heat transfer and the time required to reach specific parameters. The implemented control loop in the pasteurization process is a notable element, successfully maintaining the critical temperature of 85°C for 1 to 2 minutes. This approach not only ensures the elimination of pathogens but also preserves the organoleptic qualities of aguaymanto. The simulation presented in the project theoretically demonstrates that levels of Brix and pH would meet established standards. This project represents an integration of advanced technologies, engineering design, and precise simulation, emphasizing innovation in the food industry and the assurance of the quality of the produced aguaymanto nectar.
