The present work presents a proposal to improve the level of efficiency in the production process of the 1.9 kilogram drinkable yogurt in a dairy product manufacturing plant. Through a compilation of the data for this investigation and the corresponding analysis applying diagnostic tools such as the ABC diagram, the PQ analysis and the OEE indicator, it was detected that the current efficiency level in the plant is 58.9%, and this low efficiency economically impacts 4.19% of sales. In addition, the main reasons and their respective root causes were identified using the problem tree tool and VSM, these being the unproductive times, generated by breakdowns and the delay in the setup times of the packaging machine; and the losses, product of the miscalibrations of the same machine. It should be noted that this machine is the only one that performs the filling, capping and labeling of yogurt gallons. The solution techniques applied were SMED and a preventive maintenance plan based on RCM in a model called Yin Yang. On the other hand, there is no evidence that these techniques have been applied together in the dairy industry. The results of the implementation of the Lean tools increased the efficiency of yogurt production by 72.9%.
