Fresh fish for human consumption is provided by artisanal fishing in Peru. In recent years, this activity has faced various problems, such as increased competition from the industrial fleet, restrictions on fishing quotas imposed by the government, and the lack of adequate infrastructure for the management and conservation of fishing resources. One of the key elements to guarantee the quality and safety of hydrobiological products is ice, which is used from capture to marketing of fish as it delays the decomposition produced by microbiological elements. However, in certain areas of Peru there is a particular situation that affects ice production: the high hardness of drinking water, which modifies its thermodynamic properties, delaying the freezing process and increasing energy consumption. This generates a higher cost of ice production and delays in delivery times for artisanal fishermen, which has a negative impact on their income. Therefore, this work presents the solution implemented in the study company to mitigate the negative impacts on the production chain through the redesign of the process that consists of the addition of a subprocess that seeks to improve the thermodynamic characteristics of the raw material. The results obtained show that the implemented solution manages to significantly reduce the hardness of the water, which translates into a shorter freezing time, lower energy consumption and an improvement in the delivery time of the product to the customer, which benefits the customers. artisanal fishermen and final consumers.
