Aim: Assess the energy, protein, and zinc values, as well as the sensory acceptance of baby food made from tubers, Andean grains, and oilseeds for children under two years of age from Lima, Peru. Methodology: Experimental lab study. Proximate and microbiological analysis using validated methods. Sensory analysis for general acceptance using 5-point hedonic scale sensory test and paired preference test. Results: Microbiological parameters for both formulations (F1 and F2) were within the maximum acceptance limits established by legislation. In 100 g of product, the protein content for both formulations was 7 g. The zinc content was 2 mg and 1.99 mg, and the energy value obtained was 106 kcal and 105 kcal both in F1 and F2 respectively. The 5-point hedonic scale sensory test determined that both baby foods obtained an acceptance of “I like it” (⅘). F2 was preferred over F1 (67%). Conclusions: Both formulations exceeded 15% of the requirements for protein and zinc intake for all ages, and caloric intake for children between 6 and 11 months. For children between 1 and 2 years of age, the baby food provided 12% of their daily caloric requirement. There were no significant differences between both formulations in the nutritional and sensorial aspect.
