Culinary translation is a complex task for the translator since its terminology holds great cultural value, and cuisine symbolizes multiple processes of cultural exchanges. In this regard, texts created during the Peruvian gastronomic boom (1990-2018) attest the sociocultural phenomenon that converted its cuisine into a national identifying device with the aim of reassessing its gastronomy. On the grounds of this, Peruvian cuisine was presented and exported to the world in a positive manner using positive language (Matta, 2021). As a result, the culinary discourse that was developing at the time was affected by the different ways of perceiving and denominating reality (Seghezzi, 2011), which originated the presence of denominative variation with reference to the culinary terminology. This research work aims to identify the denominative variation present in the positive language used in Peruvian recipes published during the boom and to analyze its English translation in order to recognize how one of the most important goals of this sociocultural phenomenon was translated, that is, cuisine reassessment. To this end, this study uses a parallel corpus comprised by six cookbooks: three in Spanish and their translations into English. Using a qualitative approach, a content analysis is proposed in order to identify denominative variation, its types, and motivations, and to recognize cuisine attracting methods used through positive language. Likewise, this paper suggests carrying out a textual contrastive analysis with the aim of analyzing the techniques used for the translation of cuisine reassessment.
