In the last twenty years, consumer habits, in terms of food and wellbeing, have steadily changed and this is reflected in the type of food products they usually buy. This has led to the establishment of many specialized companies in the manufacture of food products based on natural or organic ingredients, which are valued for their nutritional properties. At the same time, this has boosted the establishment of stores specialized in this type of products, which has caused a steady market growth for this industry during recent years, something that the Covid-19 pandemic has accentuated. The objective of this research paper is to identify the main variables involved in the implementation of an organic and natural food products specialty store and, also, to evaluate the financial viability of the project. In order to accomplish this, a market analysis and its potential has been carried out, as well as the identification of the resources required to carry out the project, both from a human and a financial perspective. A qualitative research methodology is used, since in-depth interviews have been carried out. The present research paper concludes that the project of implementing a natural and organic food products specialty store is viable and generates positive returns for the investors, which is expressed in an IRR of 97.29% and a NPV greater than zero (S/. 185,339). On the other hand, the project COK is 6.56%.
