Apple production has grown at an annual rate of 0.02% since 2000, according to the Ministry of Agriculture and Irrigation (MINAGRI). In addition, the harvested area of the apple shows an increasing trend in the last 10 years, however, not all that is produced are quality products, nor is the total capacity of the area exploited. This is due to the fact that the sector does not have the necessary support nor does it develop new methodologies or tools that allow the improvement of its processes. The case study on which this research covers is on the production of organic apples in the Mala-Cañete region. The producers in this area do not have historical records of the production campaigns, therefore, they do not plan the amount of resources that is required for the next campaign. Likewise, it does not export its products because its production does not exceed the considerable percentage of quality that is required. Therefore, it is proposed to design and implement a model of planning, control and execution of production in the agricultural sector, to ensure, increase and maintain a level of exportable quality. It was concluded that for the pilot to be viable and replicable, it is necessary to increase the exportable quality product by 5%, a stable scenario, since from this point, there is a return on investment greater than 1. This simulation includes as a precedent, the opening of the export market.
