The global growing competition in the agricultural sector prompts the search for constant improvements to satisfy the demand of the agri-food sector. That is why agribusinesses seek to innovate their processes and improve their strategies in order to be more productive and profitable. In this sense, Lean stands out for generating productivity and competitiveness in the actors of the food supply chain. Likewise, Lean focuses on obtaining value by optimizing processes, eliminating activities that do not generate value and reducing waste. This study case seeks to increase productivity through the implementation of Lean tools in the primary producers of table olives in El Algarrobal valley, Ilo. For this, a methodology based on 3 phases is proposed: pre implementation, considerations and the implementation of Lean tools (JIT, standardization and VSM). The results show positive effects regarding the improvement of productivity after reducing the number of olive trees affected by pests and the number of defective table olives. The main contribution of this research is the development of a Lean methodology for all primary producers of table olives in order to substantially reduce waste generated in the sector and improve productivity.
