The effect of the addition of passion fruit juice (5, 10 and 15%) and chía flour (0.5, 0.8 and 1.0%) on raw fibre, phenolic compounds, colour, firmness and overall acceptability in rubber candies was evaluated, also considered a control sample without addition. Statistical tests for parametric and nonparametric variables were performed with a confidence level of 95%. The Levene test showed homogeneity of variances for parametric tests. The variance analysis indicated a significant effect on the addition of passion fruit juice and chía flour in the parametric variables. Duncan’s test determined that the addition of passion fruit juice to 5% and chía flour to 1.0%, showed the best firmness (1.21 N) compared the control rubber candy, with respect to colour characteristics, the treatment of 10% passion fruit juice and 0.5% chía flour allowed to obtain the best value of L* (26.88), the treatment of 10% passion fruit juice and 1.0% chía flour presented the best value of a* (-0.09) and the treatment of 15% passion fruit juice and 0.5% chía flour allowed obtaining the best value of b* (7.99). Also, the addition of passion fruit juice to 15% and chía flour to 1% produced rubber candies with higher raw fibre content (9.24%) and phenolic compounds (68.98 mg gallic acid/100 g). The non parametric test of Friedman determined significant effect of the addition of passion fruit juice and chía flour on general acceptability, Wilcoxon’s test indicated that the addition to 15 and 0.8% presented the highest acceptance in rubber candies, with a mode value of 7 corresponding to the perception of “I really like it” , this being considered the best research treatment.
