The effect of the proportion of mango:passion fruit pulp (5.50:7.10, 5.00:7.60 and 4.50:8.10) and substitution of sugar by stevia (0.23, 0.46 and 0.69%) on the physicochemical characteristics and general acceptability in a lemon verbena functional drink. The samples obtained were evaluated for titratable acidity, total phenol content, pH and soluble solids. Overall acceptability was assessed by 50 non-operated judges using a 9-point hedonic scale. Levene's test modified the homogeneity of variances for the parametric variables and the analysis of variance highlights a significant effect of the concentration of mango:passion fruit and substitution of sugar by stevia on titratable acidity, pH, soluble solids, total polyphenol content. The Duncan, Friedman and Wilcoxon tests determined that the concentration of mango:passion fruit (5.50:7.10) and the substitution of sugar for stevia (0.69%) allowed obtaining the best physicochemical characteristics and the highest general acceptability with an average of 6.12 points. , which corresponds to a perception “I like it slightly” in a functional drink based on mango:passion fruit with lemon verbena infusion and replacement of sugar by stevia
