The effect of the partial substitution of pork (Sus scofra domestica) fat with oat bran (0, 6, 10 and 14%) on the cooking performance, firmness, color and overall acceptability in the beef (Bos taurus) burger was investigated. The firmness and overall acceptability in cooked burger, and cooking performance and color in raw and cooked hamburger were analyzed. For the statistical analysis, a confidence level of 95% was considered. The effect of partial substitution of pork fat with oat bran is significant on the cooking performance in the beef burger, and on the color value b* in the cooked beef burger; the effect is not significant on firmness and overall acceptability. Likewise, it had no significant effect on the color values L*, a* and b* in the raw beef burger; the color values L* and a* in the cooked beef burger showed the same behavior. The cooked hamburger with 14% partial fat substitution with oat bran (S3), allowed to obtain the highest value of cooking performance (86.18%), firmness (9.19 N), highest color values: L* (34.7), a* (5.39) and b* (6.93), and the highest overall acceptability (8) in cooked beef burger.
