The effect of the mixture of silk banana pulp (Musa paradisiaca) Gross Michell (15-20%), orange pulp residues (Citrus sinensis) Valencia powder (0-5%) and whole milk (45-50%) on the viscosity, color, crude fiber, overrun, melting and general acceptability of a cream type ice cream was evaluated. The simple mixture design technique with extended centroid was used, followed by a multi-answer optimization by superimposing the contours of the answer that could be modeled. For the sensory analysis of the 10 treatments, 5 were given to each judge in a balanced and random way, and an arrangement of distribution of treatments, blocks, repetitions and pairs of treatments was made. The mixture of Gross Michell silk banana pulp, powdered Valencia orange pulp residues and whole milk presented a significant effect through the analysis of variance of the fiber, overrun and general acceptability, otherwise for the apparent viscosity, color and melting point of a cream type ice cream. It was determined that the mixture of 15.46% Gross Michell banana pulp, 0.29% Valencia orange pulp residues and 49.25% whole milk allowed to obtain the best values of predicted optimal responses of crude fiber with 3.19%, overrun with 40.73% and general acceptability with 6.7 points in cream type ice cream.
