The effect of three proportions of flour of two extruded varieties of quinoa (Chenopodium quinoa Willd), Salcedo INIA and Pasankalla Roja, (0: 100, 50:50 and 100: 0) and three concentrations of gum of tare (0.1, 0.2 and 0.3%), on the consistency coefficient, flow behavior index, water solubility index, water absorption index and general acceptability of an instant soup, was evaluated. For this purpose, quinoa, Salcedo INIA / Pasankalla Roja varieties with moisture content no greater than 9%, were extruded and the extruded product was ground, sieved and packaged. Then, they were mixed with the ingredients and the three proportions of tara gum for 5 minutes and the instant soup was packed in metallized bags with a capacity of 100 g and stored at 10 °C and 40% relative humidity until its later analysis. It was found that the proportion of flour of two extruded varieties of quinoa and the concentration of tara gum, presented a significant effect on the consistency coefficient, flow behavior index, water solubility index and water adsorption index, unlike general acceptability, where no significant effect was observed. In addition, treatments T7 (100: 0; 0.1%) and T9 (100: 0; 0.3%), presented adequate general acceptability (mode of 9 points, corresponding to “I like it very much”), with values of consistency coefficient, flow behavior index, water solubility index and water adsorption index of 0.023 ± 0.001 and 0.051 ± 0.005 Pa.sn ; 0.783 ± 0.005 and 0.698 ± 0.034; 43.36 ± 0.34% and 38.6 ± 0.35%; 4.40 ± 0.04% and 4.67 ± 0.02%, respectively
