The effect of the UV-C irradiation dose and storage time on the firmness, color, ascorbic acid, titratable acid, viable mesophilic aerobic bacteria count and general acceptance on golden berry was determined. The fruits were acquired from La Hermelinda market in the province of Trujillo, La Libertad, immediately moved to the laboratory of Professional School of Food Engineering, where they were selected, classified, weighed and irradiated with 3 and 5 kJ/m 2 UV-C doses, then placed in clamshell trays and finally stored at 1 °C for 28 days; a control sample. Every 7 days the dependent variables were evaluated. The modified Levene test showed variances homogeneity in all the evaluated variables. Analysis of variance denoted a significant effect (p < 0.05) of the irradiation dose of UV-C and storage time on firmness, color, ascorbic acid, titratable acid and viable mesophilic aerobic bacteria count. Duncan test determined that the 5 kJ/m2 UV-C irradiation dose of allowed to get the highest firmness, acidity and ascorbic acid content, the best color and viable mesophilic aerobic bacteria count on golden berry in the day 21 of storage. After applying the Friedman test, general acceptability showed a no significant effect of the irradiation dose and storage time on all the treatments.
