The effect of 40 KHz ultrasound exposure time (0, 5, 10 and 15 min) on the color, pH, texture profile (hardness, cohesion and elasticity), mesophilic aerobic bacteria count was evaluated and count of Staphylococcus aureus in tilapia fillet (Oreochromis niloticus). The results obtained through the analysis of variance showed that the time of exposure to the treatment with ultrasound waves had a significant effect (p <0.05) on color, hardness, cohesion, elasticity, mesophilic aerobic bacteria count, and counting. Staphylococcus aureus and had no significance on pH. It was determined that the time of exposure to ultrasound with frequency at 40 kHz to 5 min allowed to obtain the smallest variation in color L * (47.71), a * (-0.56), b * (3.19), pH (6.66), hardness (39.38), cohesion (0.42 N), elasticity (0.70 N), and the microbial load was reduced for the counting of mesophilic aerobic bacteria (3.72x105 cfu / g); but it was not fulfilled for Staphylococcus aureus (2.43x104 cfu / g) according to the Digesa Norm for hydrobiological products.
