The objective of this research was to evaluate the effect of the proportion of cassava starch: xanthan gum (10.0: 0.0, 9.5: 0.5, 9.0: 1.0, 8.5: 1.5) and pH (3.0 and 3.5) on yield stress, consistency, flow behavior index, syneresis and maximum extrusion strength of blueberry filling Jewel variety. The filling samples were made from blueberry pulp, water, sugar, using as a gelling agent cassava starch: xanthan gum. Baking was carried out until the mixture reached soluble solids concentration of 35 ° Brix. The pH of the mixtures (3.0 and 3.5) was adjusted with the addition of citric acid and/or sodium citrate. Samples were packaged in 250 g glass containers at a temperature of not less than 85 °C and stored in refrigeration (8 °C) for 24 h until further analysis. Prior to analysis, the samples were stabilized for 1 h to environment temperature. Statistical analysis reported that the proportion of cassava starch: xanthan gum and pH had a significant effect on yield stress, consistency coefficient and syneresis; for flow behavior index and maximum extrusion force there was only significant effect of the proportion of cassava starch: xanthan gum, filled with blueberry Jewel variety. The proportion of cassava starch: xanthan gum 8.5: 1.5 and pH 3.0 allowed to obtain a higher value of yield stress (38.31 Pa) and maximum extrusion force (3.67 N), adequate values of consistency coefficient (3.18 Pa.s n ) and flow index of flow (0.64) and lower syneresis (0.0%) in blueberry filling Jewel variety.
