Quality parameters were determined: pH, color, texture and presence of viable aerobic mesophilic bacteria in samples of raw beef from La Victoria and Nazareth markets from the district La Esperanza, Trujillo. The results of pH and cultivation of aerobic mesophilic bacteria viable were compared with the ranges established by Peruvian Technical Norm (NTP 201.055: 2008), and DIGESA´s Sanitary Technical Norm (NTS N°071-MINSA/ DIGESA-V.01) referred to microbiological criteria for sanitary quality and safety for food and beverage for human consumption. In 27.5% of meat samples, pH had significant effect (P<0.05) exceeding the range set by Peruvian Technical Norm (201.055: 2008) attributed to the profit and conditions of preserving meat. As for colorimetry, independence between market and brightness value (P>0.05) were observed, 55% were 31 brightness value (matte red meat). The texture measure resistance is seen as tender meat (92.5%) and moderately tender (7.5%) there being no relation to the market of origin (P>0.05). No significant difference (P>0.05) between the origin of the market and count viable aerobic mesophilic bacteria was found, only 7.5% of samples exceeded the ranges established in Peruvian Technical Norm (201.055: 2008) and in DIGESA’s Sanitary Technical Norm (NTS N°071-MINSA/ DIGESA-V.01).
