The objective of this research was to evaluate the effect of time of ultrasound-assisted osmotic dehydration in total phenolic and anthocyanins in blueberry jam (Vaccinium corymbosum L.), Biloxi variety. The fruits were selected, washed and subjected to bath of ultrasound within a osmotic solution to 56.5 °Brix and times of 10, 20, 30 and 40 minutes. They were then subjected to processing to make jams. The time of ultrasound – assisted osmotic dehydration had a significant effect on the total phenolic compounds and anthocyanins in blueberry jam. Was reported an increase of anthocyanins and phenolic compounds until 30 minutes, after this time showed an opposite effect. These results were supplemented with data from moisture and soluble solids content obtained from fresh blueberry subjected to ultrasound – assisted osmotic dehydration, in which there was an increase of soluble solids content and a decrease of humidity until 30 minutes, from which an opposite effect for both parameter was presented. Duncan test indicated a significant difference between the treatments denoted by the formation of subsets for both parameters. The time of 30 minutes was which have the mayor retention in total phenols and anthocyanins in blueberry jam, complemented by increase of soluble solids and a decreased of moisture in fresh blueberry subjected to ultrasound – assisted osmotic dehydration.
