The effect of the application of biodegradable coatings and temperature on color, firmness, weight loss and overall acceptability in avocado (Persea americana Mill) variety Fuerte for 30 days of storage was evaluated. Gelatin - starch and aloe vera gel as a base of hedges was studied also a control sample (no coverage) was used and; 6 and 10 ° C and storage temperatures. Avocados surface was washed and disinfected for 1 min with sodium hypochlorite at 150 ppm and then dried. Dry avocados were immersed in each of the solutions and air dried coverage for the formation of the Biodegradable coverages. Every 10 days avocados were evaluated on color, firmness and weight loss. Sensory evaluation was performed at the end of storage. Analysis of variance indicated that there was a significant effect of biodegradable coverage, temperature and storage time on color parameters L *, a * and b *, shell color parameter a * in the pulp, firmness and weight loss in avocado. Significant effect of temperature and storage time on color parameters L* and b * of the avocado pulp. The Kruskal Wallis test found a significant effect of temperature on biodegradable coverage and overall acceptability in avocado after 30 days of storage. The Duncan test indicated that the coverage of gelatin - starch and temperature of 6 ° C produced the best color parameters L *, a * and b * in the peel and pulp, as well as resulted in the lowest weight loss avocado. Coverage gel aloe vera and the temperature of 6 ° C allowed greater retention of firmness in avocado. The Mann- Whitney test determined that coverage of gelatin - starch and temperature of 10 ° C had the highest overall acceptability in avocado, after 30 days of storage.
