The effect of gaseous ozone and storage time on weight loss, firmness, color, anthocyanins, yeast and mold count, and overall acceptability on strawberries was evaluated. The fruits were selected, sorted, weighted and placed in trays, they were located in the chamber to expose the gaseous ozone for 5 to 10 minutes, then they were stored at 4 °C for 4, 8 and 12 days for evaluation. Parametric and nonparametric variables were performed with a confidence level of 95%. The modified Levene test showed variances homogeneity. Analysis of variance indicated a significant effect of exposure time and storage time on weight loss, anthocyanin content, and yeast and mold count, and overall acceptability in strawberries, longer storage time had a significant effect on firmness and color. Duncan test determined that the exposure time 10 minutes had the lowest weight loss (1.95 %) and yeast and mold (19054 cfu/g); as well as the strongest (1.64 N), color L* (23.73), a* (18.52) and b* (3.79) and total anthocyanins (66.43 mg/100g) at the end of storage.
