The effect of substitution of wheat flour (5, 10 and 15%) by maca flour (Lepidium peruvianum) on protein content and overall acceptability of whole wheat bread was determined. The variables were evaluated 24 hours after the elaboration of the product. Statistical tests were performed at a confidence level of 95%. The modified Levene test demonstrated the homogeneity of the variances. The analysis of variance indicated a significant effect (p < 0.05) of the substitution of maca flour on the protein content of whole wheat bread. Tukey's multiple comparison test determined that the best treatment was the substitution of wheat flour for 15% of maca flour, as it provided the highest protein value (22.60%). The Friedman test did not determine any effect or significant differences in all treatments (p < 0.05), so the Wilcoxon test was performed, in which it was determined that the substitution of HT by 10% HM, which reached the highest rank (3.43) of the other treatments, thus being the best in terms of general acceptability.
