The effect of the concentration of xanthan gum (0.05, 0.10, 0.15%) in the apparent viscosity, consistency and overall sensory acceptability of a light jelly blueberry (Vaccinium corymbosum L.) was studied. Blueberries 11-13 mm in diameter, blue uniform color, without bruising, signs of dehydration, softening or contamination were washed, disinfected, scalded, and crushed. Then the process of drafting the light jelly was made with substitution of 50% (w/w) and sucrose. Subsequently, the samples were packed until reach 50 °Brix, a temperature not less than 85 ºC. Sealed and stored at 8 °C until gel formation wait for 24 hours. Statistical analysis was performed to determine significant differences between treatments. In the ANOVA significant (p> 0.05) in the concentration of xanthan gum on the apparent viscosity of the light cranberry jelly was observed, varying in the range of 418.77 and 1540.3 cps The Friedman test found significant differences in sensory consistency and overall acceptability between treatments and the Wilcoxon test determined that jellies made with 0.15% xanthan gum had the best sensory response, with a value of 7, corresponding to ““like moderately ““in the hedonic scale, recommending this treatment for industrial processing.
