The effect of the addition of asparagus husk flour (1, 3 and 5%) on the apparent viscosity, overrun, bifidobacteria viability and general acceptability of the mango ice cream was evaluated. The ice cream was stored at -18 ° C, performing the analyzes on day 1. The analysis of variance showed a significant effect at a 95% confidence level of the addition of asparagus shell flour on the physicochemical characteristics studied. Mango ice cream with 3% addition of asparagus husk flour presented an apparent viscosity (4 ° C) of 2854.00 mPa.s; while ice cream with 1% addition presented an overrun of 25.13%, considering the best values for this type of product, based on the revised antecedents. The product with addition of 5% had the highest bifidobacteria count 6.96 logarithmic cycles for day 1. The Wilcoxon test showed a significant effect of the addition on the general acceptability of the ice cream. Mango ice cream with 1% asparagus shell flour presented the best sensory characteristics with an average range of 3.12 for day
