The effect of clove essential oil (0.05 and 0.1%) on the edible cover of corn starch modified gelatin and storage time (0, 5, 10 and 15) on the weight loss, color, firmness was evaluated. , count of molds and yeasts and general acceptance in pieces of pineapple Golden variety minimally processed. We worked with pineapple Golden previously washed and disinfected, peeled and cut into pieces, to be placed in the edible cover solution. The analysis of variance showed significant effect (p <0.05) of the storage time and antimicrobial agent on chromaticity a *, significant effect of storage time on weight loss, luminosity (L *), firmness and count of molds and yeasts ; the chromaticity b * showed no significant effect of the independent variables. Likewise, the Duncan test indicated that the coverage with 0.1% clove essential oil had the lowest weight loss and count of molds and yeasts, less color change (L * and *) and greater firmness at day 10 storage. The Friedman test showed significant effect of the antimicrobial agent and storage time on the general acceptability on day 10 of storage, then, the Wilcoxon test confirmed that the treatment with clove essential oil at 0.1% was the one that presented the highest acceptance, with an average value of 7.2 points that corresponds to a perception of ““I like moderately.
