The effect of the temperature of the osmotic treatment (40 and 50 ° C) and the drying temperature (55 and 65 ° C) on the color, the firmness, the concentration of vitamin C and general acceptability in pepper red bell strips (Capsicum annuum L.) snack was evaluated. The analysis of variance showed a significant effect (p <0.05) on the values of color L *, a *, firmness and concentration of vitamin C. It was determined that luminosity L *, chromaticity a *, chromaticity b * and vitamin C concentration are inversely proportional at the temperature of the osmotic treatment and the drying temperature, unlike the firmness that was directly proportional. The Duncan test determined the osmotic treatment temperature of 40 ° C and the drying temperature of 55 ° C allowed obtaining better luminosity L * (28.66), chromaticity a * (27.57), better firmness (12.10 N) and higher concentration of vitamin C (60.24). For the sensory evaluation, the Friedman test was applied, where it is observed that at an osmotic treatment temperature of 50 ° C and a convective drying temperature of 65 ° C it presented a fashion of 8 corresponding to the perception of “I like a lot” among the panelists, however, there was no significant difference (p> 0.05) between the samples.
