The effect of substitution of wheat flour (Triticum aestivum) by bean flour (Vicia faba) (10, 20 and 30%) on the color, specific volume, texture, protein, appearance and general acceptability in integral bread was evaluated. The statistical tests applied in the present investigation were carried out with a confidence level of 95%. For all the variables studied, variance of homogeneity of variance was determined using the Levene test. The substitution of wheat flour for bean flour had a significant effect on the color, specific volume, texture and protein in integral mold bread. The Duncan test determined that the substitution of whole wheat flour (HTI) for 30% bean flour (HH) allowed obtaining the highest protein content (13.25%) and the best texture (2.40 N). Also, the substitution of whole wheat flour for 20% bean flour allowed to obtain the best texture (1.80N), better crumb color (L = 50.75, a * = 3.55, b * = 22.18) and rind (L = 46.18, a * = 9.30, b * = 30.75). Based on this, it was chosen as the best treatment because it obtained a mold bread with a compact crumb, moist and with a very thin crust. The Friedman test determined that there were no significant differences in replacing wheat flour with bean flour over the overall appearance. The Friedman test determined significant differences in the substitution of wheat flour for bean flour over the general acceptability, later the Wilcoxon test determined that the treatment of whole wheat flour for 20% bean meal was statistically different from the rest and this being the best in terms of general acceptability (5: I like it slightly).
