Abstract: El Perú tiene una gran diversidad agropecuaria y gastronómica en las tres regiones naturales del país. La variedad culinaria de la costa y de la sierra predomina en los consumidores de Lima Metropolitana, y el acompañamiento preferido de las comidas son las cremas o salsas picantes hechas principalmente a base de rocoto o ají amarillo. A pesar del boom gastronómico de los últimos años, parte de la población desconoce acerca de los insumos y productos de la región amazónica. Según un estudio elaborado por Ipsos, el 89% de la población peruana consume alguna salsa picante con una frecuencia de 3 a 5 veces por semana, esta costumbre hace que en nuestro país se consuma más de 17,000 toneladas de ají al año. Sin embargo, las salsas picantes hechas a base de insumos amazónicos son aún desconocidas por el consumidor limeño de los NSE A, B y C.
Para conocer acerca de la preferencia de salsas picantes en los consumidores descubrimos que la mayoría de personas prefiere el consumo del rocoto; sin embargo no descartan el experimentar con una salsa picante nueva de origen amazónico.
Es por ello que presentamos nuestro producto “Selvana”, una salsa picante que está hecho a base de insumos naturales provenientes de la selva peruana tales como la cocona, el ají charapita y el sacha culantro. Esta es una nueva opción de salsa picante de sabor rico, exótico y natural que puede llegar a satisfacer el paladar de hombres y mujeres que viven en la ciudad de Lima y convertirse en el acompañamiento perfecto para realzar el sabor de sus comidas.

The culinary variety of the coast and the mountains predominates in the consumers of Metropolitan Lima, and the preferred accompaniment of the meals are spicy sauces made mainly with rocoto or ají amarillo. In spite of the gastronomic boom of recent years, part of the population is unaware of the inputs and products of the Amazon region. According to a study carried out by Ipsos, 89% of the Peruvian population consumes some hot sauce with a frequency of 3 to 5 times a week, this custom makes that our country consumes more than 17,000 tons of chili peppers a year. However, the spicy sauces made from Amazonian inputs are still unknown to the Lima consumer of NSE A, B and C. In order to know about the preference of spicy sauces in the consumers we discovered that the majority of people prefer the consumption of the rocoto; nevertheless they do not discard experimenting with a new spicy sauce of Amazonian origin. That is why we present our product “Selvana“, a hot sauce that is made from natural inputs from the Peruvian jungle such as cocona, charapita chili and sacha culantro. This is a new option of spicy sauce with a rich, exotic and natural flavor that can satisfy the palate of men and women who live in the city of Lima; and become the perfect accompaniment to enhance the flavor of their meals.
