The purpose and scope of this study are to inform upon what are the critical factors that impede the commercial sale of standard industrially processed poultry in Lima’s traditional metropolitan food market. Also within the scope of this research paper is to understand why today consumers might prefer to purchase alternatively processed poultry products such as “free-range,” “organic” or “pastured“ instead of standard industrially processed poultry. Research methods involved in the creation of this study include research and analysis of scholarly texts, in-depth interviews conducted with different industry subject matter experts and other people associated to the Peruvian poultry industry. There are critical legal, economic, and business factors for justifying but it is the social factors which explain the social factors point to a desire towards improving consumer quality of life standards within the metropolitan área of Lima. Consumers also wish to increase awareness on the present conditions of the poultry industry while moving towards growing production standardization processes towards meeting higher international sanitation standards. Following this descriptive-explanatory analysis, the obtained results will serve to improve poultry product quality as well as optimize the Peruvian poultry industry.
