Abstract: Centro de formación y difusión de la gastronomía, ubicado en el distrito Villa María del Triunfo. Un lugar en donde se impartan clases técnicas para el desarrollo de profesionales responsables y comprometidos con su contexto. Y, sobre todas las cosas, un espacio inclusivo a la comunidad, que permita la inserción de la misma a los conceptos fundamentales de una correcta alimentación y la manera de implementarlos a su dieta diaria y en cierta medida, a la dieta de quienes dependen de ellos. El centro contará con espacios destinados a fines académicos y a la difusión gastronómica. Dentro del área académica, los alumnos podrán recorrer las circulaciones, a modo de altillo, observando los trabajos que se lleven a cabo en las aulas talleres en un nivel inferior. Esto permitirá tener un aprendizaje de segundo grado, indirecto, libre y constante. Por otro lado, los comensales y visitantes podrán realizar recorridos por los huertos y practicar labores de aprendizaje en los talleres públicos. Además, la estrecha relación entre los ambientes públicos, la plaza circundante y la plaza pública frontal presenta una oportunidad para promover propuestas inclusivas por medio de actividades comerciales de carácter gastronómico y dotar de mayor dinamismo y animación a los espacios públicos preexistentes.
The theme of this thesis is a gastronomic education and diffusion center, located in Villa María del Triunfo district. A place where technical classes are imparted to responsible and committed professionals. And, above all, an inclusive space for the community, that allows people to understand the fundamental concepts of a correct feeding and the ways to implement those to their daily diet, and, in some way, to the diet of the ones who depend on them. The center will have spaces for academic purposes and gastronomic dissemination. Within the academic area, students can go through the circulations, as a second floor balcony, observing the work that takes place in the workshops at a lower level. This will allow for second-grade, indirect, free and constant learning. On the other hand, diners and visitors can take tours around the crops and practice learning tasks in public workshops. In addition, the close relationship between public environments, the surrounding plaza and the public square on the front presents an opportunity to promote inclusive proposals through commercial activities of a gastronomic nature and to provide more dynamism and animation to pre-existing public spaces.
