The objective of the current investigation was to determine, during a period of time, the refrigeration time effect at 4°C and the frozen time effect at –18°C of the total content of polyphenols, anthocyanins and antioxidant activity related to blueberries (Vaccinium corymbosum, Biloxi variety) that grow in the different microclimates found in Peru. It was used Folin-Ciocalteu, differential pH and Brand-Williams methods in order to obtain determinations for total polyphenols, total anthocyanins and antioxidant activity (IC50) of the fruit. Physicochemical features such as pH and Brix grades were also analyzed, as well as kinetics of anthocyanin degradation over time. Data was processed with STATISTICA, using the Tukey test with a significance degree of 0.05%. At the end of the storage a significant increase (p<0.05) was found for the variables in study. Mean pH value increased in 5.8% for refrigerated fruit and 4.1% for frozen fruit. Brix grades increased in 37.1% and 20.4% for refrigerated and frozen blueberries, respectively. The total phenols content increases (85.5% for cooling and 61.2% for freezing), the total anthocyanins content decreases (57.1% for cooling and 45.1% for freezing) and the antioxidant activity increases significantly (56.7% for cooling and 58.6% for freezing) in both treatments (P<0.05). The freezing treatment showed a lower rate of degradation of anthocyanins in Coris, whereas there was no difference between the zones in refrigeration. It should be mentioned that both treatments maintain optimal levels of compounds beneficial to human health and are suitable for this type of fruit; however, it is recommended to eat blueberries that are close to the date of harvest.
