In developing this present thesis the extraction of anthocyanins process was characterized, for the commercial manufacture of a natural drink of purple corn (Zea Mays L.) using the surface analysis method, for temperature intervals which were between 47.57 to 132,43°C, and times from 11,36 to 138,64 minutes. Also, with the methodology of the stationary point were found the parameters of maximum yield of the process (33,991 mg/100 g), which corresponded to a temperature of 98,3942°C and time of 105,8944 minutes, nevertheless, it was perceived that this time was too long, so it was decided to reduce to the maximum without incurring in considerable losses of the yield, for that reason the canonical analysis was used, which were determined that the optimal parameters of temperature was 100 ° C and 60 min, with a decrease of only 2,49 % of the yield of the process and with a saving of 45% of time.
