Abstract: La presente tesis tuvo como objeto de estudio, el diseño de un secador a escala banco para la producción de harina de sangre de pollo.
En la primera etapa de la investigación se evaluó la cinética de secado para obtener los parámetros de diseño, en la cual se midieron dos variables, velocidad de aire y temperatura de trabajo, por medio de 4 pruebas (duplicadas) en las cuales se obtuvo que la mejor velocidad de trabajo es a
5.63 m/s, sin poderse determinar aun la temperatura de trabajo.
En la segunda etapa de la investigación se hizo un análisis químico de proteínas totales y de hierro, en las dos muestras de sangre seca obtenidas en la primera parte (secadas a 55 y 60°C), de donde la cantidad de hierro en cada muestra fue similar y teniendo una variación significativa en la cantidad de proteínas, de donde se obtuvo la temperatura de diseño (T=55°C), temperatura a la cual las proteínas no están totalmente desnaturalizadas por el calor y donde se verifican los conceptos teóricos.
This thesis had as its object of study, the design of a semi industrial dryer for the production of chicken blood flour. In the fisrt stage of research, drying kinetics were evaluated to obtain the design parameters, in which two variabies,air speed and operating temperature, were measured by four tests (duplicates) in which it was found that the best working speed is 5.63 m / s, and it was unable to determine the work temperature (found in the second part). The second stage of the research was a chemical analysis of total protein and iron, in both dried blood samples obtained in the first part (dried at 55 and 60 ° C), where the amount of iron in each sample was almost the same and having, a significant variation in the amount of protein, where was found the design temperature (T = 55 ° C), temperature at which proteins are not fully denatured by heat and where the theoretical concepts are verified.
