The purpose of this study was to present a proposal to replace an aluminum laminate packaging material of a dehydrated beverage with a metallized laminate packaging. Three metallized packaging materials with different water vapor permeability were tested; also, initial and critical conditions of moisture and water activity were determined by physicochemical and sensory tests. In addition, the equation obtained from the linearization of the adsorption isotherm was calculated and with this, an estimation of shelf life of the product in the environmental conditions of Lima and Iquitos was obtained. The result of this estimation concluded that for Lima the metallized packaging with water vapor permeability of 0.60 g/m2day, 0.30 g/m2day and 0.17 g/m2/ day, reached a shelf life of 9.6 months, 19.3 months and 34.0 months respectively and for Iquitos, they reach a life of 4.8 months, 9.5 months and 16.8 months respectively. Finally, the recommended metallized packaging was with a water permeability of 0.3g/m2 day, which is enough barrier to keep the product of the degradation factors in both, Lima and Iquitos, achieving a saving potential of 2.5 million soles
