In recent times, one of the items that has grown significantly in the domestic market, are supermarkets; specifically to what refers to food products, because the volume, variety and / or presentation, it is complicated a uniform and controlled management in each of the stores, which is why there is an area that is responsible for ensuring the food safety, which is called the Quality Assurance Area, where I currently work as a quality Supervisor, with more than nine years of work experience. To offer safe groceries, it is necessary to control certain aspects that could directly affect the product, since it is received, stored and then exhibited to be purchased by customers; therefore, it is important that certain conditions and / or external variables are verified that can directly impact the supply chain within the store, such as: the place of storage and / or exhibition, rotation, stowage, labeling, etc. ; They are handled daily by the store's operational staff and are randomly verified by the quality staff. In the stores there are rules, procedures, guidelines, instructions, booklets, etc., to ensure the proper handling of food, but sometimes there are deviations that can put the product at risk, so it is necessary to identify the aspects more critical and recurrent, which translates as noncompliance within the controls and / or verifications that are carried out; For this reason, to elaborate this research work, we have analyzed and tabulated the information obtained in the unannounced inspections of ten stores during twelve months, in order to identify opportunities for improvement, which allows us to minimize or eliminate risks in the management of groceries inside the stores
