n this review the theoretical bases of the lipids and the different fatty acids, their classifications, the fatty acids that make up different food sources, especially vegetables, and the encapsulation processes of oils that can be atomized to obtain dehydrated products will be taken into account, all vegetable oils rich in essential oils that have an a potential application in the powder-drinks nutritional industry. The plant sources identified are linseed oil and sacha inchi oil, as well as other potentials such as coconut oil (MCT). Finally, considerations for the conditioning of the raw materials, the atomization process, the selection of an encapsulant, concentrations of oils expected in the final product, characteristics of the powders obtained after the atomization process and barriers to avoid degradation in the time of the microencapsulated oils by spray drying would be mentioned
