The “International Year of Quinoa“ in 2013 allowed the promotion of the grain and it was necessary to know the impact it had on the consumption of quinoa and the food security of the urban and rural population. In this sense, in the present investigation the four dimensions of food security were analyzed: availability, access, use and stability in the urban and rural areas of the provinces producing quinoa (Chupaca, Concepción, Jauja and Huancayo) of the Junín Region . The result was that, despite the high prices for the quinoa boom, the population of the four provinces had an adequate level of consumption in 2014 equivalent to 0.36 kg / person / month; however, non-producing rural consumers were the most affected, as they went from consuming 0.54 to 0.2 kg / person / month, replacing it with vegetable stew, potatoes and rice, not contributing to the access and use dimensions of Food Security (FS) . Also, by analyzing the supply of quinoa to meet regional demand and the seasonality index of supply and prices, it was found that the supply of grain to the Junín regional market did not satisfy its demand and there were months of shortage of grain with production below monthly average. Therefore, the FS's objectives of availability and stability were vulnerable to the price increase. On the other hand, by factor analysis, it was identified that the consumption of quinoa in Junín depended on market (prices and income) and attitudinal factors (cultural pattern, tastes and preferences) that explain 67.2% of the variance in consumption data. Finally, information asymmetries were found in producers and buyers, which was reflected in the high amount to be paid by the final consumer after a complex, centralized and traditional marketing network.
