This research aims to determine the optimal formulation of gluten-free breads, which optimizes the volume, crumb structure and nutritional value, varying the concentration of quinoa flour, potato starch and water, applying the design method mixtures. For purposes of this investigation, was evaluated in a first stage the proximal composition of the ingredients that make up the bulk of the bread, these ingredients were quinoa flour, potato starch and water, to which a design is applied axial mixtures with minimum and maximum percentages of the same restrictions. In a second stage taking the above mentioned design determined within the universe of possibilities of mixtures in a triangle simplex points defined experimental formulations (19 in total), where the variables responses for each formulation was evaluated, these being specific volume baking bread, crumb structure and nutritional value (protein content). In a third step responses variables are optimized using the overall desirability criteria from the area of feasible formulation of the estimated models. The optimal formulation presented 33,04 per cent quinoa flour, 20 per cent starch potato and 46,96 per cent of water on the main body, having a specific volume of 1,9 cm3/ g, 34,54 alveoli structure/mm2 and 8,7 per cent protein (nutritional value). Finally the optimal formulation was physicochemically characterized, also evaluated sensoriallly.
