The objective of the study was to evaluate the effect of the encapsulant and drying temperature in obtaining a microencapsulated sacha inchi oil (Plukenetia volubilis L), was evaluated. Oil samples were obtained through the cold pressing process, which were used in the encapsulation process. For encapsulation, maltodextrin, concentrated whey protein and a combination of both were used. The encapsulant that provided optimal values was the one in which maltodextrin was used with concentrated whey protein at a temperature of 1500C, humidity of 3.84% ± 0.05 and oil yield in the encapsulation of 39.3% ± 1.11 respectively, and a useful life time extrapolated at 25 ° C from 1589 h equivalent to 0.18 years.
