The work was developed in the company ARIACAR S.R.L, whose main activity is the production and commercialization of products derived from the olive tree. The company's information collection was performed using the plant hygiene requirements checklist (FAO 1995b) and the survey to estimate the level of quality costs (IMECCA 1994). With the information obtained and applying the Quality tools were identified the main causes of the main problem “quality assurance deficiency“. The aforementioned analysis made it possible to establish the improvement proposals: to establish the statistical control of processes and to develop a manual of good manufacturing practices for the processing line of green olives stuffed with brine chestnut. For the statistical control in the packaging process, 1600 measurements of the continuous variable were collected: Drained weight of green olives stuffed with chestnut, the study of this characteristic involved the use of Histograms, normality test, elaboration of Shewhart control charts and the Analysis of the processing capacity, from which it was determined that the packaging process works inadequately and requires a process analysis necessarily. In the preparation of the Manual of Good Manufacturing Practices, procedures were included to ensure that the production and marketing of the products comply with safe conditions, from the reception of the raw material to the exit of finished product, having as a frame the buildings, Surroundings of the plant, personnel, equipment, utensils.
