Pulses have been grown as food for many years mainly because of their high nutritional value at low cost. Among the most consumed are beans, peas, chickpeas, and lentils. The WHO recommends that its consumption be 9 kg/year, but Peru is below that indicator. Looking to promote better nutrition, Empresa Alimentaria carried out a project intending to implement a development and distribution plan for packaged beans for national restaurants within the gastronomy portfolio. Canarian beans and medium lentils were selected to develop it, as they are the most consumed legumes nationwide and the most used within the menus. It was determined that a menu consumes an average of 19.5 kg/month of beans and 9.5 kg/month of lentils. The potential demand was estimated at 80.0 t/month, focused on the cities of Lima, Trujillo, and Huancayo, as they are those with the most registered clients of the business. A quality grade 2 was determined for both products, and a 1 kg bag format under the Nicolini brand. The average consumption (kg) was analyzed after six months, obtaining results of 9.54 kg/month and 4.26 kg/month for beans and lentils.
