This research aimed to determine the efficiency of moringa (Moringa oleifera Lam) extract to remove the turbidity of the effluents of the passion fruit nectar production. The response surface methodology was used using central composite design (CCD) with six central points. The data analysis was carried out in the RSM package of R software. The following factors at the five levels were used: effluent turbidity -ET- (101, 170, 335, 500 and 568) NTU (Nephelometric Turbidity Unit) and moringa extracts -ED- (134.4, 180, 290, 400 and 445.6 mg/L) and as response the variation of the effluent turbidity in %. In addition, physicochemical parameters of the effluent such as pH, turbidity, color and electrical conductivity were also analyzed. Moringa cake contains 45.866 % protein, 17.710 % fat, 3.201 % fiber, 4.642 % ash, 20.981 carbohydrates and 7.600 of moisture. The moringa extract (20,000 mg/L) was obtained by 35 min of agitation at room temperature. The following treatments 290 ED and 335 NTU, and 400 ED and 500 NTU reduced the turbidity to 92.25% and 94.16%. Moreover, ED were characterized by the polyacrylamide gel electrophoresis (PAGE-SDS) method. The ED revealed that a polypeptide 6.5 kDa might be the main coagulant. The pH (2.74- 3.64) of the effluents from the production of passion fruit nectar did not changed the ED 290 and 400 mg/L. The Color was removed by 71.57 % for ED 290 mg/L and 79.80% for ED 400 mg/L, whereas electrical conductivity was 2.43 and 2.96 mS/cm, respectively.
