In order to reduce the hardness of the beef, a seasoning based on papain was prepared with condiments, salt and mono sodium glutamate; which is applied by sprinkling on a sample of roasted pejerrey and by a mechanical process called «bifurcation», the enzyme penetrates the meat previously applied a time of 30 minutes of rest, this sample is cooked to obtain an extremely tender and succulent product. Papain is a plant enzyme that is extracted from papaya and has the ability to metabolize proteins in food and its main use is as a meat improver. The objective of the present investigation was to demonstrate if there are significant differences and preference with respect to the quality factor: hardness of the beef in the roast cut pejerrey; which is characterized by being used in parboiled and is perceived as a hard meat; this sensory study was carried out on 80 consumers in Metropolitan Lima, who were given two samples of fried roast pejerrey, where a sample was pre-seasoned with a powder mixture containing papain as the main input vs the other pre-seasoned sample with a powder mix without papain. In addition, the main quality indicators of raw meat, such as pH and CRA, were reviewed to determine the characteristics of raw meat. At a statistical value higher than the value obtained in the sensory analysis with a level of significance of five percent, there is a significant difference in the texture of meat with respect to the hardness of the meat, where the recipe based on papain has a higher intensity of hardness that control and in addition there is significant difference in the preference of consumers acceptability.
