Pisco is a grape brandy with complex aroma and flavor, which highlights an intense and persistent flavor with fruity overtones reminiscent the raw material source. Rest significantly improves quality attributes of this distillate, which through contact with oxygen helps to stabilize compounds thereof and improve organoleptically. This study aimed to evaluate the effect of two aeration conditions (absence and presence of air) in the variation of the concentration of volatile components during three months of rest, minimum time required by the Regulation of Denomination of Origin Pisco, for grape distillate Pisco Puro Quebranta obtained in two distillation equipment: falca and pot still. Quebranta grape wine was distilled from two distillation systems: falca and pot still, according to the method of elaboration of the company Destilerías Unidas SAC. The distillate product from each system was packed in glass bottles of one liter capacity and underwent two conditions: first without aeration (full 100 percent), and the second with 25 percent space (filled 3/4 of total volume) for containing atmospheric air. Volatile components concentration average of three samples were measure at three resting times: immediately obtained (0 months), 1.5 and 3 months of rest as required by the new Regulation of Designation of Origin Pisco. Average concentrations of acetaldehyde, isobutyraldehyde, total esters, methanol, total higher alcohols, total volatile acidity and furfural reached by Quebranta Pure Pisco samples did not exceed the limits set by the Regulation of Denomination of Origin Pisco whatever type of distillation equipment used or the applied condition of rest during threemonth evaluation. Regarding the applied three-month minimum rest required by Regulation of the Denomination of Origin Pisco, concentration of acetaldehyde, ethyl acetate, isoamylacetate, n-butanol, 2-phenyl ethanol, Acetic and Propionic acids showed no significant difference (p> 0.05). However, concentrations of isobutyraldehyde, methanol, n-propanol, isobutanol, amyl alcohol, furfural and isovaleric acid decreases in the initial month after the third month, while isobutyric acid increases significantly (p ≤ 0.05). The type of distillation equipment and resting conditions (with and without aeration) had no significant ((p> 0.05) in the variation of the concentration of aldehydes, methanol, total esters, higher alcohols, volatile acids and furfural of Quebranta Pisco during the threemonths of rest evaluated. We only found a significant (p ≤ 0.05) in the initial concentration of total acidity (71.33 mg/100 ml of anhydrous alcohol), furfural (3.62 mg/100 ml anhydrous alcohol) and isobutyraldehyde (1.89 mg/100 ml anhydrous alcohol) obtained by pot still, which showed a higher concentration compared to those obtained by falca (60.47, 2.83 and 1.55 mg/100 ml of anhydrous alcohol to total acid, furfural and isobutyraldehyde respectively).
