This research was carried at the Vegetable Crops Research Program of the Agronomy Faculty of the National Agrarian University La Molina – Lima, from January to May 2019. The objective was determining the yield and fruit quality on the organic production of watermelon (Citrullus lanatus) cv. Santanella, by using grafting technique. It was designed four treatments: Pelops rootstock (type Lagenaria siceraria), Cobalt rootstock (type Cucurbita maxima x Cucurbita moschata), Basalt rootstock (type Cucurbita moschata) and the ungrafted watermelon crop. All the agronomic labour was carried out with inputs allowed in organic production. The variables evaluated were: total yield – commercial, number of fruits/ha, fruit quality parameters (average weight, diameter, length, shell thickness and percentage of soluble solids). The statistical design used was the Randomized Complete Block Design (RCBD) with 04 treatments and 04 replicates. There were statistically significant differences for the total yield, commercial yield and fruit weight variables; however, no significant statistical differences were found for the quality variables. The highest yield was obtained with the Pelops rootstock (Lagenaria siceraria), with a total of 51.97 t/ha and commercial yield of 48.21 t/ha and 7814.82 fruits/ha. The highest average fruit weight was achieved with the Basalt rootstocks (Cucurbita moschata) and Pelops (Lagenaria siceraria) with 6.69 kg and 6.67 kg respectively. For quality parameters, Pelops presented the greatest fruit length and diameter with 30.7 mm and 20.03 mm respectively, the greatest shell thickness with Basalt rootstock with 10.27 mm and the highest percentage of soluble solids was reached by Pelops with 10.34 %.
