The aim of the current investigation was to evaluate the composition and hygiene in the milk of Saanen goats reared in a stable in the central coast, and its effect on the cheese yield using prediction equations. The evaluation was carried out during the months of September and October 2014, at the facilities of Granja Los Huarangos S.A., located in the town of Manchay, in the district of Pachacamac, Lima; taking samples from batches of milk as raw material for the process of making Pachacamac, Fresco and Feta type cheeses. The analyzes of density, acidity of milk and serum, somatic cell count, California mastitis test, time of reduction of methylene blue and protein were carried out in the dairy plant of Granja Los Huarangos S.A., while the analyzes of Fat and total solids of milk and cheese were carried out in the Milk and Meat Laboratory of the Faculty of Zootechnics, at the La Molina National Agrarian University, transporting the samples once a week under refrigeration conditions. The averages of the variables evaluated were: density (D): 1,030 ± 0,0005 g/mL, milk acidity (AL): 16,58 ± 0,56 °D (Dórnic degrees), protein (PT): 4,00 ± 0,13 percent, fat (G): 3,79 ± 0,23 percent, total solids (ST): 12,13 ± 0,36 percent, non-fat solids (SNG): 8,34 ± 0,03 percent, and the reduction time of methylene blue (TRAM): 258,93 ± 100,18 minutes. The prediction equations determined for the cheese yields (RQ) were: fresh Pachacamac cheese: RQ = - 5,73 + 0,752 ST + 1,15 SNG, in dry matter: RQ = - 6,83 + 1,11 ST; Fresh cheese in fresh: RQ = 214 - 238 D + 7,52 PT + 2,31 SNG, in dry matter: RQ = - 1,77 + 0,00624 TRAM + 1,14 ST – 0,81 SNG; Fresh Feta cheese: RQ = - 1,36 + 0,00226 TRAM + 0,842 ST + 0,51 SNG, in dry matter: RQ = - 6,88 – 0,70 ST + 2,64 SNG.
