A study was carried out on citrus fiber applications Citri-Fi, imported from the company Fiberstar, in cakes, jam and mayonnaise. Reference is made to the various uses of this product in different segments of the industry, such as baking goods, jams and dressings. In each of the segments mentioned, different formulations with different substitutions of some component were evaluated. In the case of cakes, a partial fat replacement was performed in order to improve the sensory quality throughout the useful life; in the jams, a partial pectin replacement was made to define if it can be replaced by fiber; and in mayonnaise fat was partially replaced in order to reduce calories in the product. In all cases, the base formula, on which the modifications were made, was used as a control for the sensory evaluation performed on the final products. It was demonstrated that citrus fiber has a good performance as a substitute for partial fat in cakes and mayonnaise, being able to successfully reduce 25 percent fat in cakes and 40 percent fat in mayonnaise compared to the total used in normal formulas; It was also demonstrated that this fiber can work in mixture with the pectin to give acceptable results in formulation of jams with additional reduction of fruit pulp
