This precise essay is the analytical process of informational data regarding 43 districts of Metropolitan Lima appealing to convenient “TO-GO” stores, whose objective was to verify the effectiveness of the application of COVID-19 protocols and the manner in which food was handled during the first year of the pandemic, with the purpose of demonstrating the mechanisms and measurements that were rapidly put in practice by the company, all the way from the organization of work reunions carried out by the teams to elaborate each and every protocol, reviewing information, their implementation and utilization. The verification of the level of compliance was completed through a “check list based on the BPM Manual (Buenas Prácticas de Manufactura) from the company, and was adapted to the Protocol of Food Handling due to COVID-19. The results of these monthly neutral inspections were evaluated by a higher direction, detecting opportunities of future improvement. Meanwhile the mechanisms of supervision and control were implemented for the compliance of preventive measures for the food handling and the protocol of COVID-19. Also, for an appropriate health protection of workers, these practices were best executed by the personal team, which led the company to maintain the economic activity at a good level, while also fulfilling the government and district obligations, plus giving out food safely to the clients. After the enforcement of COVID-19 protocols during the first year of the pandemic, the level of compliance was 94% (GOOD), also achieving that 98% of the inspections were carried out with zero notice from the municipalities.
