The present work shows the physical, chemical, sensory and nutritional changes presented in fresh milk after being pasteurized, evaporated and sterilized in cans until a product with commercial sterility is obtained. Within the aforementioned, there are important changes in the structure of carbohydrates, fats and proteins that significantly alter the sensory and nutritional properties of milk. These thermal treatments to which milk is subjected after milking, in order to sanitize and conserve it (to achieve inactivation of enzymes and thermal death of microorganisms), also cause a technological damage of different magnitudes on the biological value (proteins and vitamins) and on the organoleptic characteristics of the final product (color, smell and taste). Finally, the importance of the initial quality of the fresh milk that will be subjected to these thermal treatments is highlighted; the quality is a function of the time and the temperature to which it is subjected during the process and these factors originate a decrease of this same quality. Therefore, the greater care in milk production, the less rough treatment requirements necessary to protect it from deterioration, would preserve the original quality
