Hypertension is one of the key risk factors involved in the development of chronic non-communicable diseases (CNCD), being quinoa (Chenopodium quinoa Willd.) a good source of bioactive compounds that could reduce the risk of suffering said CNCD. The aim of this work was to determine both antihypertensive and antioxidant bioactivities, by inhibiting the angiotensin-converting enzyme (ACE), and by changes in oxidative stress, glucose levels and lipid profile, respectively, of two varieties of quinoa (Negra Collana and Roja Pasankalla) in Holtzman rats induced to hypertension. 30 rats randomly distributed in 5 treatments were used, and with the exception of the negative control, the remaining 4 treatments were induced to hypertension. Those 4 treatments were fed, for 21 days, with 1) red quinoa, 2) black quinoa, 3) standard diet (SD) + antihypertensive drug (AD) and 4) SD without AD, respectively. At the end of the experimental phase, the animals were sacrificed and the obtained data were submitted to ANOVA under a completely randomized design and the mean comparison test was calculated using Duncan, by Statgraphics statistical software. It was observed that the consumption of red quinoa significantly increased both, the levels of HDL-c and the inhibition of the ACE in the kidney (p <0.05). In addition, regardless of the variety of quinoa, it was seen that its consumption not only increased antioxidant activity in vivo but also reduced glucose levels. The inhibition of ACE in blood was greater after the consumption of black quinoa. Also, black quinoa showed greater antioxidant and antihypertensive capacity in vitro. To sum up, the consumption of red quinoa improved HDL-c levels while both varieties improved the activity of endogenous antioxidant enzymes and the inhibition of ACE. In addition, at an in vitro level, black quinoa has the highest antioxidant and antihypertensive bioactivity.
